Recipe: Pineapple Whip

 
The weather is finally nice out and I have been craving fresh fruits and ice cream and BBQ's!  I definitely got my fill of grilled chicken and corn on the cob (my summer favorites!) this weekend!  Since we are trying to eat as un-processed as possible, I was determined to come up with a nice fruity like ice cream...this Pineapple Whip is all that and then some!!

 
 
Pineapple Whip
 
 
 
You will need:
*2 cups frozen pineapple (you can use fresh pineapple, but you will need to freeze it before blending!)
* 1/4 cup of almond milk (you could try canned coconut milk for piña colada soft serve!)
*1/2 tbsp of honey
 
Instructions:
Blend all ingredients until a frozen sorbet texture is achieved. Scoop out with an ice cream scoop, or squeeze through a pastry bag
 
 

 

 You can also freeze leftovers (what are those!?) into ice cube trays, or a mini cupcake pan like I did and use them in smoothies later!
